Gwen's Sausage Tortellini Soup
As the weather turns bitterly cold, my craving for comfort food grows. After a long day of working outside in the weather, coming home to a fresh steamy pot of delicious soup is just the thing you need to warm you up from the inside.

Gwen's Sausage Tortellini Soup Recipe
Ingredients:
1 package of sausage links
2 32oz boxes of Chicken Broth
1 can of carrots
1 handful of raw spinach
1/2 tablespoon minced garlic
salt
pepper
1 yellow or white onion
1 tablespoon olive oil
1/4 cup flour
1 family sized package of refrigerated three cheese tortellini
4 cups of shredded white cheddar cheese
2 cups heavy whipping cream
Brown sausage links in a skillet. Chop them up with a spatula. When they are cooked thoroughly, transfer them to a big pot.
Chop up the onion and saute it in the skillet with the leftover sausage grease.
Add minced garlic and a tablespoon of olive oil. Saute for approx. 5 mins.
Go ahead and add more garlic if you'd like :)
Add 1/4 cup of flour to the skillet and a splash of chicken broth to loosen up the good stuff. Mix well.
Transfer the contents of the skillet into the big pot.
Add 8 cups of chicken broth and 2 cups of heavy whipping cream.
Drain the carrots and add them to the pot.
Add a handful of raw spinach to the pot and stir.
Bring the pot to a boil, then turn down the heat to simmer and add 4 cups of shredded white cheddar cheese, stirring continuously until cheese melts.
Simmer for 1 hour.
Serve with garlic breadsticks as a side.
